Russian Cake “Mashenka”




I love condensed milk, specially in the cakes.  When I found this recipe on Pinterest, I immediately wanted to try it.  To tell you the truth I never had a cake that has condensed milk in the batter.  It turned out to be one of the yummiest cakes.  It was super easy to make too.  =)


INGREDIENTS

1 can of sweetened condensed milk
1 cup all-purpose flour
1/4 tsp salt
2 eggs
1tsp baking soda
2 tbs vinegar or lemon juice

Cream:

300 g sour cream
¾ cup sugar
1/3 cup liquor ( I used 2tbs of Rum)



115 g Dark Chocolate, grated

Nutella Banana and Oats Cookies

 

 

Here is one recipe my whole family approved.   I think by far eating oats inside the cookies is so much yummier that way!!! Hope you will like this recipe too!!! =)

Ingredients

1 1/2 cups flour
1 cup sugar
1/2 tsp.baking soda
1/2 tsp.salt
3/4 cup shortening (I used butter)
2 large mashed ripe bananas
1 egg
1 3/4 cup oats
1/4 cup Nutella
Mix, Mash and Bake @ 400F for 8-10 min =)

Delicious Apple Cinnamon Pull-Apart Bread



Here is what I made yesterday, it's an Apple Cinnamon Pull Apart Bread.  After it was done baking, it was gone in seconds, I didn't had a chance to take a better pic. =) But honestly it was really delicious,  I will be making it again very soon. ( Hopefully next time I'll take a better pic)

For the filling:
 
2 tablespoons unsalted butter
1/2 cup packed brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon vanilla extract
3 medium apples (about 2 cups), peeled, cored, and thinly sliced

 
For the dough:
 
1/4 cup (4 tablespoons) unsalted butter, melted
 
 
1/3 cup lukewarm milk
1/4 cup lukewarm water
2 large eggs
1 teaspoon vanilla extract
3 cups Flour
1/4 cup sugar
 
 1/2 teaspoon salt 
 2 1/4 teaspoons instant yeast
For the glaze:
 
1 cup powdered sugar
1 tablespoon milk

Chocolate Chip Muffins Yummy Recipe


Here is another recipe I would like to save and share it on my blog.  These muffins turned out super delicious, specially with a hot cup of tea =)

Ingredients:

 2 cups all-purpose flour
1/3 cup light brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2 eggs, lightly beaten
2/3 cup whole milk
1 1/2 teaspoons pure vanilla extract
1 1/2 cups milk chocolate chips

Chocolate Chip Cupcake Recipe


There is something about cupcakes that my daughter really likes.  Every time we past a pastry department in the grocery store, she would always ask me to buy her a cupcake.  Today was one of those days, but instead of buying her one I promised to bake some with her after she  naps.  She loved that idea.  While she was napping I found couple recipes that I wanted to try.  Here is one of the recipes my family liked!!!

INGREDIENTS:

 1 1/2 sticks unsalted butter room temperature 
3/4 cup light brown sugar packed 
2 large eggs 
1 1/3 cups flour 
1/2 tsp. baking powder 
1/2 tsp. baking soda 
1/8 tsp. salt 
1/2 cup milk 
1 tsp. vanilla 
1/2 cup chocolate chips (semisweet or bittersweet)


For these cupcakes I used different frosting recipe!

Frosting Ingredients:

1 cup heavy whipping cream    
 ½ teaspoon pure vanilla extract     
2 TBSP Sweetened Condensed Milk

And finally to garnish we sprinkled some cocoa powder and topped it with condensed milk.

Russian Crepes with Nuttella Filling Recipe

My whole family loves Russian Crepes!!!  Couple days ago I tried a new recipe from www.yelenasweets.com and I just love how they turned out! I think I'll be using this recipe from now on =)   


Ingredients:

6 eggs
2 cups milk
1 1/2 cups flour
3 Tbsp melted  butter
3 Tbsp sugar
3/4 tsp salt

Poppy Seed Rugelachs Recipe

 

 
 
I think this by far my favorite poppy seed rugelachs recipe.  It's really easy to make and they taste so delicious!!!
 

Ingredients:

8 oz. cream cheese, softened
1 1/2 sticks of butter, softened
1 yolk
2 Tablespoons of water
2 cups flour

Rasberry and Blueberry Scones Recipe

I had my 13 years old cousin, Polina sleeping over at my house last night.  It was so much fun having her over even tho she is 10 years younger than me.  One of her favorite things to do is baking, so she encouraged me to bake something that I have never done before.  So we found this new recipe that I would like to share with you.  Its super easy and delicious:


Ingredients

2 cups flour
6 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup cold butter/margarine, cut into 1/2 inch cubes
1 lemon, zest of
1 egg
1/2 cup heavy cream, chilled
1 tbsp vanilla extract
2 cups raspberries- blueberries
2 tbsp butter, melted
5 tbsp sugar
1 tbsp lemon juice
4 raspberries
1/2 cup powdered sugar

Russian Piroshki with apples – Пирожки




Ingredients
Ingredients for the Dough:

1½ Tbsp oil
15 oz luke warm water
4 cups + 2 Tbsp all-purpose flour (divided)
1 tsp salt
1 Tbsp Active Dry Yeast
1 Tbsp sugar (omit sugar if doing meat or potato filling)
2 to 3 apples, peeled, cored and chopped finely (I use a food processor and pulse several times)
¼ cup sugar (1/4 teaspoon per piroshok)

Other Ingredients: 
Enough canola oil to go half-way up the side of the piroshky when frying.
Extra flour to dust the cutting board.
 

P.s - I baked mine in the oven sense my hubby doesn't like fried version.

Cake "Royal" Recipe


My daughter's favorite cake. =)

Ingredients:

1st layer:

    
2 egg yolks
    1/3 cup
sugar
    
100g butter
    
0.5 tsp soda - mixed with vinegar
    
1 cup flour


2nd layer:

    
2 egg whites
    
2/3 cup sugar
    
0.5 - 1 tbsp walnuts


Cream:

    
0.5 cans of condensed milk
    
150g butter 

Preparation:1st layer:

 Mix egg yolks with sugar,Add the melted butter, baking soda and flour.Knead the dough and refrigerate for 30 minutes. Make 4 layers. 
2nd layer:Beat the whites with the sugar for the meringue.Coarsely chopped walnuts.In a frying pan hand smear the doughsprinkle with nuts (and press into the dough)and coat with cream (layer #2).Each cake put in the oven over medium heat (about 350 degrees) for 12-15 minutes, until lightly colored meringue.

Cream:Beat butter with condensed milkFinished the cooled cakes by spreading with butter cream.Sprinkle with nuts or chocolate

Crepes With Cream Recipe





 These crepes are my husband's favorite dessert, and I think I know why.  Of coarse it's the filling cream!!! And the only way to find out how good they really are, is to make them yourself.

Ingredients

For the Batter:
½ cup lukewarm water
1 cup milk
4 large eggs
4 tablespoons unsalted butter, melted. Plus more to sauté.
1 cup all-purpose flour (you can use ½ cup whole wheat flour and ½ cup all-purpose)
2 tablespoons sugar
Pinch of Salt

For the Filling:

8 oz package cream cheese, at room temperature
1 can of condensed milk
8 oz cool whip


Instructions



    Cream:

    1. Mix all ingredients with a mixer.
    2. Spread the cream on the crepe.
    3. Roll into a tube.
    4. After place all of the rolled crepes in the oven dish and place it in the oven at 350 degree for 10-15 min.
    5. Serve when it's warm!

    Biskvit Cake with Berries and Cream




    This is one of the easiest and delightful cake I have ever tried. Big Thanks goes to my friend Alina, for this creamy and light cake recipe.

    Ingredients to make dough:

    6 eggs
    1 cup sugar
    1 cup flour

    Ingredients to make cream:

    1 cup sour cream
     1/2 cup sugar
    1/2 cup heavy whipping cream
    1/8 oz. cool whip

    Dough:

    In the bowl of a stand mixer with a whisk attachment, beat together
      eggs with sugar, until white fluffy cream.
    Slowly add flour, and mix it into the cake batter using a spatula.
    Bake in 10" or 12" round baking pan at 350, until its ready about 30-40min.
    Let it cool.
    Cut the inside out just leave 1" edge around.
    Take the part you cut out and break it up into small pieces and mix it with cream.
    Put this mix back into the cake.

    Cream:

    In the bowl of a stand mixer with a whisk attachment, whisk together all of the cream ingredients.
    Spread the cream on top of the cake.
    Add fresh berries over the top
     (it can be strawberries, blueberries, raspberries, blackberries, ect).

    P.S - you can make this cake with single layer or double.

    "Squirrel Cake" with Almonds and Chocolate Recipe




    Ingredients for batter:

    preheat oven to 375 degrees


    1 1/2 cups of your favorite nuts.toasted,cooled, and chopped in a blender (you can have them mixed using variety)
    1 cup sugar
    3 eggs
    2 sticks butter melted but not hot
    1 teaspoon baking powder
    1/4 cup sour cream
    2 cups flour

    Directions for cake batter:
    In a mixing bowl or stand mixer, beat eggs on high speed until they will be foamy and pale.Add the sugar,sour cream and butter. Mix on low.

    Combine flour,nuts, and baking powder.
    Gently combine the flour mixture with the whipped eggs.

    Grease a  9 x 2 3/4 spring-foam pan.*
    Pour half of the batter to the pan and spread it with spoon or spatula.
    Bake for about 20-25 minutes.
    Repeat with the rest of the batter.

    * Or you can use a smaller pan and bake four cake sheets so that way you won't need to slice it.

    Amaretto syrup:
    1/2 cup water
    2 tablespoons sugar
    2 tablespoons Amaretto liquor

    Bring all the ingredients to a boil, simmer until the sugar is dissolved. Let cool.

    Ingredients for cream:
    Inside-
    1 can condensed milk ( cook the cans for two hour in water, or use  prepared Dulce DE leches)
    2 sticks butter softened at room temp.
    4 tablespoons sour cream

    Beat together butter with dulce de leche. Add sour cream, and beat again.

    Carefully slice the cake to have four layers all together.
    Spray or add syrup using a spoon on each layer.
    Spread the cream evenly on each layer leaving the top.


    Outside-
    2 cups heavy whipping cream
    1 cup powdered sugar
    3 tablespoons cocoa powder (sifted)

    Beat together heavy cream with sugar.Gradually add cocoa powder.
    Spread the cream all over the top and sides of the cake.

    Decorate the cake as desired. Top it with mixed nuts,chocolate,  sifted cocoa.

    The Yummiest Jello Recipe


     
    Ingredients

    1 packet unflavored gelatin
    ½ cup milk
    ½ cup sugar
    8 oz tub sour cream
    8 oz tub cool whip, refrigerated (should be fully thawed, not frozen)
    6 oz raspberry jello
    2 cups boiling water

    Instructions
    1. Spray a 8×8-inch glass baking dish with cooking spray. This keeps the jello from sticking to the pan when serving.
    2. In a small pan, whisk together 1 packet unflavored gelatin with ½ cup milk over medium heat. Continue whisking until it just begins to steam, remove from heat (DO NOT BOIL). Set aside to cool.
    3. In the bowl of an electric mixer over medium speed, whisk together ½ cup sugar, 8 oz tub of sour cream and a 8 oz tub of cool whip until well blended. Make sure your cool whip is fully thawed and soft or you will have clumps in your jello.
    4. With the mixer on medium speed, slowly add the warm milk mixture.
    5. Immediately pour half of the cream into the prepared baking dish. Smooth the top.
    6. Mix red food coloring into the second half of the cream until well-blended. Quickly spread pink jello over your white cream. Refrigerate for at least 30 minutes.
    7. Dissolve jello with 2 cups boiling hot water and set aside to cool to room temperature.
    8. Once jello is cool or just luke-warm, pour the raspberry jello over the bird’s milk. You can also add fruit over the top after you pour your jello. Try raspberries or sliced strawberries for an extra tang.
    9. Refrigerate jello 2-4 hours, or until jello is set. Have fun with it. Make it unique by adding any kind of jello or food coloring.

    Russian Crepes with Cheese, Raisins and powdered sugar (Nalesniki)




    Ingredients

    For the Batter:
    ½ cup lukewarm water
    1 cup milk
    4 large eggs
    4 tablespoons unsalted butter, melted. Plus more to sauté.
    1 cup all-purpose flour (you can use ½ cup whole wheat flour and ½ cup all-purpose)
    2 tablespoons sugar
    Pinch of Salt

    For the Filling:
    8 oz package cream cheese, at room temperature
    16 oz small curd cottage cheese
    ⅓ cup sugar
    ¾ cup raisins
    Powdered sugar for serving (optional)

    Instructions

    How to Make the Crepes:

    1. Put all of the ingredients for the crepes (in the order that they are listed) ½ cup water, 1 cup milk, 4 large eggs, 4 Tbsp butter or olive oil, and 1 cup flour in a blender and blend until well combined.
    2. Melt a dot of butter in a non-stick skillet over medium heat (2 skillets make the process go faster).
    3. As you are pouring into the skillet, swirl the batter to evenly coat the bottom. If you get any small gaps, you can fill them with more batter. Depending on the size of your skillet; add about 2-3 tbsp of batter. I use a small ladle.
    4. Once the bottom is lightly golden (about a minute or less) flip the crepe using a sharp edged spatula to easily get under the crepe. Let the other side get lightly golden and plop the crepe out onto a cutting board.
    5. Repeat with remaining batter; you may not need to dot with butter after the first time if your skillet is a good one (and remember there is butter in the batter). Don’t stack hot crepes on top of each other. Once they are just warm or room temp, they can be stacked.
    How to make cheese filling:

    1. In a colander, rinse the cottage cheese with cold water and drain well.
    2. Mash the cream cheese, cottage cheese and sugar with a potato masher until well combined and creamy. Cottage cheese will still be a little lumpy.
    3. Using a spatula, spread 2 generous tablespoons of cheese filling on each crepe.
    4. Sprinkle with about 15 raisins.
    5. Roll the crepe into a log and cut in half.
    6. Refrigerate crepes that aren’t being served. It keeps in the fridge for almost one week.

    To Serve:
    1. Melt about 1 tablespoon of butter in a skillet and sauté the rolled cheese crepes on medium heat until golden brown on both sides. They don’t take long to sauté. Be careful not to burn them.
    2. Dust with powered sugar (optional) and serve with sour cream or jam on the side.

    Simple Blueberry Lemon Bread


    Ingredients
    1 c. blueberries, rinsed and drained
    2 tsp. flour
    1 c. white sugar
    1/3 c. butter, softened
    2 eggs
    2 tsp. grated lemon zest
    1 1/2 c. flour
    1 tsp. baking powder
    pinch of salt
    1/2 c. milk

    Directions
    Preheat oven to 350 degrees. Lightly grease a loaf pan.

    Dredge the blueberries in  tsp. flour; set aside. In a large bowl, cream together butter and sugar until light and fluffy. Stir in eggs one at a time, beating well with each addition. Mix in the lemon zest. In a separate bowl, combine flour, baking powder, and salt.

    Stir the flour mixture into egg mixture alternately with the milk. Fold in the blueberries. Pour batter into prepared loaf pan.

    Bake in preheated oven for 50-60 minutes or until a toothpick inserted into center of the loaf comes out clean. Allow bread to cool for 10 minutes before removing from pan.

    Optional glaze (highly recommended!): Blend 1 Tbsp. lemon juice with 2 Tbsp. sugar; brush on hot loaf and return to oven for five minutes. This forms a pretty, crispy coating and adds a nice little zing of lemon!

    Best Ever Cinnamon Rolls


    Ingredients:

    2 1/2 teaspoons yeast (one package)
    1/4 cup warm water
    4 cups flour
    1/3 cup sugar
    1/4 cup butter
    1 teaspoon salt
    1 cup warm  milk (or water)
    brown sugar and cinnamon for sprinkling
    powdered sugar, butter, and milk for topping


    Dissolve the yeast in the 1/4 cup water.
    Mix flour, sugar, and salt.
    Add soft butter and yeast mixture to the one cup of warm milk.
    Mix the liquid mixture with the dry ingredients.
    Mix well and knead until smooth.
    Put in a greased bowl and let rise for about an hour (or more).
    Punch down the dough and roll out into a rectangle.  Spread with softened butter
    and then sprinkle generously with brown sugar and cinnamon.
    Roll up and cut into 14 rolls. Place in two greased 9 inch pans and let rise again. 
    Bake at 400 for 13-15 minutes.

    Topping:
    Melt 2 tablespoons butter and add about a 1/2 cup powdered sugar to make a paste
    Add a LITTLE bit of milk until the mixture is thin enough to spread easily. 
    Put the topping on the rolls while they are still  hot.

    Today we tried a new cinnamon rolls recipe, and let me tell you they turned out so good that I wanted to save this recipe in My Little Recipe Book.  I love making cinnamon rolls with my two years old daughter Anika, she is my true little helper.

    Strawberry Layer Cake Recipe


    Cake Ingredients:
    12 eggs (cold or room temp), divided
    2 cups sugar, divided
    2 cups flour (sifting not required), divided
    Frosting Ingredients:
    1 cup heavy whipping cream
    2 (8oz) packages cream cheese, softened at room temp
    3/4 cup sugar
    Filling/Decor:
    2 lbs Fresh strawberries (1 1/2 lbs to blend and put inside the cake and 1/2 lb to decorate the top)
    Chocolate chips to melt and decorate the top; optional

    When I saw this recipe, I really wanted to make it right of way..... and I am glad I did its super delicious, I think it will be perfect for a upcoming Valentines Day.

    Chocolate Chip Banana Muffins Recipe

    Ingredients
    • 1/2 cup butter
    • 1/2 cup sugar
    • 1/2 brown sugar
    • 2 eggs
    • 2 bananas smashed
    • 1/4 cup sour cream
    • 1/4 cup chocolate chips
