Russian Cake “Mashenka”




I love condensed milk, specially in the cakes.  When I found this recipe on Pinterest, I immediately wanted to try it.  To tell you the truth I never had a cake that has condensed milk in the batter.  It turned out to be one of the yummiest cakes.  It was super easy to make too.  =)


INGREDIENTS

1 can of sweetened condensed milk
1 cup all-purpose flour
1/4 tsp salt
2 eggs
1tsp baking soda
2 tbs vinegar or lemon juice

Cream:

300 g sour cream
¾ cup sugar
1/3 cup liquor ( I used 2tbs of Rum)



115 g Dark Chocolate, grated

Tiramisu Cake Recipe


This recipe I found at Natashaskitchen.com, her recipes are amazing from appetizers to desserts, she has one of the best recipes.  I seriously want to try all of her recipes.... So if you have a min go check her blog. =)

Anyways this cake recipe is so easy to make and it is soooo delicious =)

Ingredients for Biskvit Cake:

6 large eggs, room temp
1 cup all-purpose flour, sifted
1 cup sugar
1 tsp vanilla extract

Ingredients for Tiramisu Frosting:

1.5 cups heavy whipping cream, very cold
1 (8oz) stick cream cheese, room temperature
1/2 cup sugar

Ingredients for Tiramisu Coffee Syrup & Topping:

1 1/2 cups Strong coffee, room temperature or cold
2 Tbsp sugar
2 tsp rum
1 Tbsp unsweetened Cocoa Powder for dusting the finished cake

Biskvit Cake with Berries and Cream




This is one of the easiest and delightful cake I have ever tried. Big Thanks goes to my friend Alina, for this creamy and light cake recipe.

Ingredients to make dough:

6 eggs
1 cup sugar
1 cup flour

Ingredients to make cream:

1 cup sour cream
 1/2 cup sugar
1/2 cup heavy whipping cream
1/8 oz. cool whip

Dough:

In the bowl of a stand mixer with a whisk attachment, beat together
  eggs with sugar, until white fluffy cream.
Slowly add flour, and mix it into the cake batter using a spatula.
Bake in 10" or 12" round baking pan at 350, until its ready about 30-40min.
Let it cool.
Cut the inside out just leave 1" edge around.
Take the part you cut out and break it up into small pieces and mix it with cream.
Put this mix back into the cake.

Cream:

In the bowl of a stand mixer with a whisk attachment, whisk together all of the cream ingredients.
Spread the cream on top of the cake.
Add fresh berries over the top
 (it can be strawberries, blueberries, raspberries, blackberries, ect).

P.S - you can make this cake with single layer or double.

Medovik - Russian Honey Cake Recipe

Ingredients:

2 eggs
2 Tbsp. honey
1 cup sugar
1 stick butter
1 tsp. baking soda
1 Tbsp. vinegar
3 1/2 cups flour + about 1/2 cup for rolling

Cream:
2 cans cooked condensed milk
1 1/2 sticks unsalted butter, room temperature

Direction:
  1. Get a saucepan and mixing bowl that would fit the top of the saucepan for a double boiler. Add water (about 4-6 cups) to the saucepan and bring it to a simmer; in a mixing bowl combine eggs, sugar and honey. Add butter and place the bowl on top of the saucepan and mix until the mixture will warm up, butter gets melted, sugar gets dissolved and everything will get combined. 
  2. Turn off the heat and take mixing bowl down. Add baking soda mixture (in separate little bowl mix baking soda with vinegar), and mix well.  Gradually add in flour. The dough should be kind of soft. Cover the dough with plastic and refrigerate for 20 minutes. (it will thicken).
  3. After dough has been refrigerated, transfer it onto lightly floured flat surface and shape into a log.  Then cut it into 7 equal sections.
    Preheat the oven to 400F.
    Take wax paper and cut 11 inch long sheets.  You will need at least 7 of these; one per layer.
    Next, take one piece of dough, place it at the center of the floured wax paper, sprinkle some flour on top of the dough and roll into a thin flat circle. 
  4.  It needs to get about 9” circle. Next, using a large 9” circle bowl, place onto the rolled dough upside down, so the edge of the bowl in touching the dough. Using a sharp knife, cut the dough around the edges of the bowl. Lift the bowl and you should have a perfect circle.
  5. You can roll all the circles of dough and then bake, or can bake as you go, one at a time.
  6. Combine all the scraps from the sides and at the end roll it to one layer (it does not have to be perfect shape; I crush that and use crumbs to decorate the sides of the cake.)
  7. For baking, place a baking sheet on the middle rack in the oven.
  8. Take the wax paper with the rolled and cut dough on and place it on the baking sheet.
  9. Bake for about 6-7 minutes, take it out, let cool and peal the wax paper from the baked layer.
  10. Continue until all of the sections of the dough are baked.
Cream:
With electric mixer beat butter until soft and creamy, add condensed milk  and beat the  cream until it will thicken and fluffy, for about 4-5 minutes.

Place one layer onto the cake platter, spread 3-4 tablespoon of filling evenly over the layer, place another cake layer on top of filling and repeat until you finish all the cake layers.

Strawberry Layer Cake Recipe


Cake Ingredients:
12 eggs (cold or room temp), divided
2 cups sugar, divided
2 cups flour (sifting not required), divided
Frosting Ingredients:
1 cup heavy whipping cream
2 (8oz) packages cream cheese, softened at room temp
3/4 cup sugar
Filling/Decor:
2 lbs Fresh strawberries (1 1/2 lbs to blend and put inside the cake and 1/2 lb to decorate the top)
Chocolate chips to melt and decorate the top; optional

When I saw this recipe, I really wanted to make it right of way..... and I am glad I did its super delicious, I think it will be perfect for a upcoming Valentines Day.
