Zuppa Toscana Soup Copycat Recipe from Olive Garden


This soup is one of my favorite soups.  Its super easy to make and it is a perfect soup for a rainy or snowy days!!!

Ingredients


1 lb Italian sausage Mild
2 large russet baking potatoes, sliced in half, and then in 1/4 inch slices
1 large onion, chopped
1/4 cup bacon bits (optional)
2 garlic cloves, minced
2 cups kale or 2 cups swiss chard, chopped
2 (8 ounce) cans chicken broth
1 quart water
1 cup heavy whipping cream

Panera Bread Copycat: Creamy Chicken And Rice Soup Recipe




 It has been really cold lately, here in Washington.  All this cold weather makes me want to crave a hot bowl of a cream soup.  Here is a new recipe I discovered today.  It's called Creamy Chicken and Rice soup.  It's a copycat recipe from Panera Bread Restaurant.  I haven't tried it at the restaurant yet, but I will try it next time I go there, because it is sooooo Delicious!!!  Perfect soup for a cold day!!!
 
INGREDIENTS:

6 cups chicken broth

2 boneless chicken breast halves (fried and cubed)

1/2 cup of rice
 
1/2 teaspoon ground black pepper

1/2 cup all-purpose flour

3/4 cup butter (12 tbsp. or a stick and a half)

1 cup carrot, diced

1 cup celery, diced

1 cup onion, diced

3 cups light cream (I used 1 cup of heavy whipping cream mixed with 2 cups of water)
 
Mrs. Dash seasoning (optional)

salt to taste

Ham for topping

Soup "Shurpa" - Recipe




This is my first time trying to make this soup, and let me tell you it turned out super easy and delicious.  Even my 2 year old toddler liked it =)

 
You will need:

     500g lamb or beef
3 tbs olive oil
     5-6 pieces. potato
     2 pcs. bell pepper
     2 pcs. tomatoes
     1 large carrot
     1 large onion
     2-3 cloves of garlic
     2 tbsp tomato paste
     salt
     pepper
     herbs to taste


Preparation:

  1. In the skillet with the oil saute onions.
  2. Add the meat. 
  3. In cooked meat add tomatoes (diced) 
  4. Then add the bell pepper and carrots (diced) 
  5. Add the tomato paste and water to cover the vegetables with meat. 
  6.  Stew for 30 minutes. 
  7. Peel the potatoes, cut into cubes 
  8. Add the potatoes to the meat and vegetables.
  9.        Season with salt and pepper.  
  10. Boil potatoes until tender. 
  11. In the end, add the squeezed garlic.
  12.        Close the lid. Turn off the gas.
  13.        And leave for 10-15 minutes.

Serve with greens.

Copy Cat Panera Bread Broccoli Cheese Soup Recipe





Ingredients

1/2 medium onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half ( I used heavy whipping cream)
2 cups chicken stock
1/2 pound fresh broccoli ( florets only)
1 cup carrots
1/4 teaspoon of salt
1/4 teaspoon nutmeg
1/2 teaspoon pepper
8 ounces grated cheddar cheese

Instructions
  1. Saute onions in a little butter in a small pan – set aside.
  2. In a large stockpot  – melt butter. Add flour and mix for 3 minutes.
  3. Slowly add half- half – mixing the entire time.
  4. Slowly add chicken stock- mixing the entire time.
  5. Let simmer on low for 20 minutes.
  6. Add broccoli, carrots; onions and cook on low for 25 minutes.
  7. Season with salt, pepper; nutmeg.
  8. Place soup in a blender or use an immersion blender and puree.
  9. Heat soup over low heat and add cheese and mix till melted.
  10. Serve in a bread bowl.

Cheese Soup with Mushrooms Recipe



Lately I was in the mood of trying new soup recipes, this is one of the soups that caught my eye.  Its super easy and super delicious. 

Ingredients:

    6 cups of chicken broth
    4 little potatoes
    1/2 cup melting cheese (I used The Laughing Cow Swiss Cheese)
     1 carrot
     1 small onion
     1 1/2 cups fresh mushrooms
     salt
     fresh parsley

preparation:

Potatoes cut into cubes or strips.
Carrots peel and grate.
Finely chopped onion.
Wash mushrooms and cut into slices.
In boiling broth add potatoes and cook for 15 minutes until potatoes are cooked.
In the sautepan, saute onions and carrots, then add the mushrooms and saute vegetables 15 minutes.

* You can fry the mushrooms separately from the vegetables in butter

In a saucepan with the potatoes add vegetables and mushrooms.

 2-3 minutes until done add grated cheese, stirring vigorously soup to cheese melted. 
Add salt to taste.
Add chopped parsley when serving.

Light Vegetable Soup with Rice Recipe



 ingredients:

  2 small tomatoes
    1 bell pepper
   
2 1/2 -3 tablespoons rice
    
1 medium onions
     6 cups of water or vegetable broth ( you can also use chicken or beef broth)
     parsley
     2 tablespoons of olive oil
1/2 tsp ground pepper
     salt to taste
    

preparation

Onion peel and chop.
Wash the tomatoes, make a cross-shaped incision in the skin, place in boiling water for ~ 1 minute, then carefully remove the skin. Cut tomatoes into small cubes.
Wash bell pepper, cut the seed box, again washed and cut into small cubes.
Parsley, wash, dry and chop.
Wash rice.

Instructions


In a saucepan, heat the oil and put the onions
Saute onions about 2-3 minutes, stirring occasionally
Add parsley and tomatoes - fry for ~ 2 minutes
Put bell pepper, stir and fry for ~ 1 minute
Pour into a pan of hot water or vegetable broth, bring to a boil, put the washed rice and mix well.
Cover the pan and cook the soup after boiling at low boil, ~ 13-15 minutes, stirring occasionally.
Add the paprika, salt, pepper. Stir the soup, turn off and let stand, covered about 10-15 minutes.
 When serving sprinkle with chopped fresh parsley.

Buckwheat Soup Recipe Mmmm Mmmmm =)


 This here, is one of my favorite soups, I hope u like this recipe too.


Ingredients
 
6 cups of chicken broth 
2-3 medium potatoes (peeled and finely chopped)
1 small onion
(peeled and finely chopped)
1 carrots (peeled and grated)
2 tbsp olive oil 
parsley
 1/3-1/2 cups buckwheat (washed)
salt and black pepper to taste


Directions:

Bring the broth to the boil.
Add potato and after 2-3 minutes add buckwheat and salt to taste. Saute the onions and carrot in the olive oil and add to soup.  Cook until ready.
Pour cooked soup in bowls and garnish with parsley to taste.

Russian Meatball Soup – Суп с Фрикадельками


Ingredients:
6 cups water
2 potatoes, diced into 1/2 inch peices
1 Tablespoon butter
1 carrot, shredded on large holes of box grater
1/2 of a large onion, finely diced
salt, pepper
3-4 Tablespoons rice
3-5 peppercorns
1-2 bay leaves
fresh chives, parsely, dill, minced, for garnishing
For the meatballs:
1 lb ground chicken
1 slice bread, or 1 cup fresh breadcrumbs
1/4 -1/3 cup milk
1 teaspoon salt
1/4 teaspoon ground black pepper
1 egg
1/4-1/2 of an onion, grated on the finest setting on the box grater, to form a pulp

It's raining today, here in Washington.  This kind of weather makes me want to make some soup.  And of coarse it has to be Russian Meatball Soup, one of my favorite.  It's not only healthy but also super delicious!!!

Cream of Celery Soup recipe

Ingredients :


350g celery stalks sliced finely
25g butter
110g potato, peeled and cut into small dice
2 medium leeks, trimmed & washed, sliced finely
570ml hot vegetable stock (I used Marigold Swiss vegetable bouillon)
150ml double cream
150ml whole milk
sea salt & freshly ground black pepper (or white, if you've got it!).


One of the easiest soup recipe.  It is not only easy but also delicious and perfect for a cold seasons =)

Split Green Pea Soup Recipe

Ingredients
1/2 pound dried green peas OR 1 10 oz package frozen peas
1 t. olive oil
1 onion, sliced
2 carrots, sliced
2 garlic cloves, finely chopped
1 can chicken broth OR 2 chicken boullion cubes and 2 cups water
1/2 t. salt
black pepper to taste
4 pieces bacon, cooked and crumbled (optional)
4 t. plain yogurt, cream, or sour cream (optional)

Russian "Borsh" Recipe

 Ingredients

7 cups chicken broth
4 medium size potatoes
2 cups shredded cabbage
  2-3 bay leaves 

1 tablespoon sea salt
  
6 tablespoons olive oil
½ large onion, sliced

2 medium carrots, chopped
  
1 small bell pepper, sliced
½ cups grated beets
  
1 (one) 8 oz. can tomato sauce
  
Mrs. Dash or favorite seasoning to taste
2-3 tablespoons chopped green onion
  
2-3 tablespoons chopped dill

Baked potato soup with cream cheese and carrot!!! =)

 Ingrediets:

  • 8 oz. cream cheese, softened and cubed
  • 4 small-medium potatoes, peeled and chopped
  • 6 slices of thick cut bacon, chopped into 1/2″ pieces
  • 1 onion, chopped
  • 1 small carrot
  • 6 cloves of garlic, chopped
  • chicken stock
  • salt and freshly ground pepper
  • chives, chopped

Directions:


1. Cut the bacon into 1/2″ pieces.


2. Cook the bacon over medium high heat until the bacon is cooked.

3. Remove the bacon from the pot.



4. Remove the bacon fat from the pot leaving only 2 table spoon of bacon fat, add the onions, cooking until soft.
5. Add the garlic and cook for another minute while stirring until fragrant.

6. Add the potatoes to the pot and stir around to get a bit of bacon fat on the potatoes.
7. Add enough chicken stock to the pot to cover the potatoes, and turn up the heat to bring to a boil.

8. Add one carrot, cook until its soft.

 9. Add salt and pepper to taste.
11. Puree about 2/3 of the soup using blender, leaving some chunks of potato in the soup.


12. While blending, add the cream cheese into the soup.
13. Add the bacon back to the soup, along with the chives.

Broccoli soup!!!

Yummy Potato and Broccoli Soup =)
Ingredients:

6 slices bacon
1/3 cup flour
2 cans chicken broth
3-4  Red potatoes
1 1/2 cups corn
1 1/2 cups Broccoli
1 carrot
1 cup heavy cream
salt and ground pepper, to taste
